Baked Cod with Wasabi

This healthy baked cod recipe is livened up using our Dreams chutney, which is crammed with garlic, onion and wasabi flavours. Serve with some simple side dishes to have dinner on the table in less than 30 minutes.

Ingredients

  • Ingredients serves 2
  • 2 Fillets Cod each 150-200g
  • 4 tsp Dreams Garlic & Onion Chutney with Wasabi
  • 2 Spring Onions
  • 1 tbsp Fresh parsley
  • 1 tsp Cooking oil
  • Salt & pepper

Instructions

  • Preheat the oven to 200C/ 400F/ GM 6
  • Brush the base of a small roasting tin with the oil
  • Lay the cod onto a chopping board and use a sharp knife to slash into the flesh diagonally 3-4 times in one direction, then the other to create a cross-hatch (diamond) pattern
  • Dry each fillet with paper towel then season lightly with salt and pepper
  • Share the Dreams Spiced Garlic & Onion Chutney with Wasabi between the fillets and use your hands (or the back of a teaspoon) to spread it out, pushing it into the cuts just made
  • Roast for 15-18 minutes or until the cod is cooked through – it will take on an opaque appearance and flake easily with a fork when it is ready
  • Slice the spring onions and chop the parsley finely, then scatter over the fish and serve
  • Serving Suggestions
  • Buttered new potatoes and some steamed green vegetables or a crisp salad are the ideal accompaniments to this easy fish supper. Alternatively, roast some potatoes and vegetables until almost cooked and add the fish to the baking tray for the last 15-18 minutes of cooking.

Notes

Expert Tips
• It’s up to you whether to use skinless or skin-on fillets of fish.
• Previously frozen fillets are fine to use but they will need to be defrosted.
• Check the fish for stray bones before cooking by running your fingers over the top of each fillet. Use kitchen tweezers to pull them out.
• Take care not to overcook the cod as it will turn dry and rubbery. Thick fillets will need longer to cook than thin fillets. The times stated are a guide only.
• Take the flavours in a different direction entirely by replacing the Dreams chutney with our popular Gunpowder pickle. Or ramp up the tropical flavours using our Frisky pineapple & chilli chutney – perfect for summer dining.
