Bloody Mary Prawn Cocktail

Take your prawn cocktail up a level by including our Spice Bloody Mary Chutney in your recipe. Layer your salad up in a glass, adding in a dash of our chutney as you go for a punchy twist on this classic appetiser. It’s prawn cocktail, but not as you know it.

Ingredients

Ingredients (for 2)

  • 24 Large cooked prawns
  • 1 Little gem lettuce
  • 8 cm Cucumber
  • 6 Cherry tomatoes
  • 2-3 teaspoons Spice Bloody Mary Chutney
  • 3 tablespoons mayonnaise
  • 1 1/2 teaspoons tomato ketchup
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Lime juice
  • 4 dashes Hot sauce such as Tabasco
  • 1/8 teaspoon Salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon Cayenne pepper
  • Cress – to garnish

Instructions

  • Prepare the Marie Rose sauce by mixing the mayonnaise, ketchup, Worcestershire sauce, lime juice, hot sauce, salt, pepper & cayenne pepper together.
  • Wash and chop the lettuce roughly.
  • Chop the tomatoes into halves or quarters.
  • Remove the seeds from the cucumber and cube it.
  • Put a small amount the Spice Bloody Mary Chutney into the bottom of each glass.
  • To each glass add 1/6 of the lettuce and top with 1/6 of the cucumber and tomato pieces.
  • Top each glass with 3 prawns then spoon a generous teaspoon of the Marie Rose sauce onto the top.
  • Spoon a dab of the chutney over the sauce or around the side of the glass.
  • Repeat the layers twice more, finishing with the Marie Rose sauce and another small amount of the chutney.
  • Garnish with a grind of black pepper and salad cress then carefully divide the 6 remaining prawns between each glass, wedging them onto the rim.

  • Buttered wholemeal or granary bread is the ideal partner to your Bloody Mary prawn cocktails.

Notes

Expert Tips
• When it comes to the Spice Bloody Mary Chutney, a little goes a long way. Add more if you would like to but be careful not to overpower the other ingredients. Aim for 1-2 teaspoon per serving glass.
• Add in other salad ingredients such as spring onion, radish or avocado as desired.
• The recipe can easily be doubled or tripled to serve more people.
• Try serving small glasses of Bloody Mary cocktails alongside your appetiser.
