
Blue Cheese Potato Skins
Crispy, golden potato skins topped with creamy blue cheese and our AMBER Garlic & Honey pickle make an irresistible appetiser or sharing plate for get-togethers with family and friends. These indulgent bites are the perfect balance of sweet and salty savoury flavour. Try them alongside a glass of fizz.
Ingredients

- 4 Baking potatoes medium
- 1 tbsp Olive oil
- 160 g Blue cheese e.g. Stilton, Dolcelatte
- 1 tbsp AMBER Garlic & Honey Pickle
- Flat-leaf parsley
Instructions
- Prepare the potatoes – prick them a few times with a sharp knife and bake in a moderate oven (180°C/ 350°F/ GM 4) for 60-75 minutes until tender. Allow to cool for 15 minutes.
- Use a sharp knife to quarter each potato. Scoop out most of the flesh, leaving a bit behind to allow the potato skin to hold its shape.
- Brush each quarter of potato skin lightly on both sides with oil and lay on a baking tin lined with baking parchment.
- Season with salt and pepper and put the skins in the oven for 7 minutes to crisp up.
- Meanwhile chop or crumble the blue cheese.
- Scatter ¾ of the cheese over the potato skins.
- Return them to the oven for a further 12-15 minutes until the cheese begins to bubble.
- Lay the skins onto a serving plate, scatter the remaining cheese over the top and drizzle the AMBER Garlic and Honey pickle over the top.
- Garnish with chopped parsley and serve immediately.

Expert Tips
• This recipe is easy to scale up or down to suit the number of people you are feeding.
• Seasonal cautiously as blue cheese can be quite salty.
• Make ahead: Prepare the recipe up to step 6 then cover and chill until required (bake for an additional 5 minutes if they have been in the fridge).
• The flesh from the potatoes can be used to make mashed potato or a potato pie topping.
• Don’t have a jar of AMBER to hand? Try HARMONY, PEARLS or CARAMELISED instead.
