
Cheese on Toast with Red Onion Marmalade

Ingredients
- 2 Slices crusty bread
- 60 g Mature cheddar cheese
- 4 tsp Rapture Spicy Red Onion Marmalade
- Fresh chives
Instructions
- Preheat your grill, line an oven pan with foil and lay the bread on the foil
- Meanwhile grate the cheese finely
- When the grill is glowing, toast one side of the bread until golden
- Flip the bread over and grill for 1 minute, just to dry it out slightly (don’t let it brown)
- Spread 1 tsp of the red onion marmalade over each slice of bread (on the barely toasted side) then divide the cheese over them too. Pile it high as the cheese will flatten once grilled
- Place back under the grill and toast for 2-3 minutes until the cheese is melted and bubbly
- Slice the chives and scatter over the top once the toasts are cooked

Serve the toast straight away, with the remaining Rapture Marmalade served either spooned on top or in a small pot at the side.

• White, brown or even sourdough bread works just fine in this recipe.
• Similarly, thick or thin bread can be used, depending what you have to hand.
• When grilling, position the oven pan as close to the grill as possible to ensure a quick
