Fried Egg on Chilli Cheese Toast

Our recipe for fried egg on chilli cheese toast with Blaze Hot Chilli Chutney is quick, simple and extremely tasty. Taking just 15 minutes to make this is a great option for a speedy breakfast, brunch, lunch or even a late-night snack!

  • 1 Slice crusty bread thickly sliced
  • 1 tbsp Blaze Hot Chilli Chutney
  • 45 g Cheddar cheese
  • tsp Red Chilli finely diced
  • 1 Spring onion
  • 1 Egg
  • Salt & pepper

Instructions

  • Preheat the oven to 200C/ 400F/ GM6.
  • Lightly toast the bread on both sides (remove it when it is just showing signs of browning).
  • Spread the Blaze Hot Chilli Chutney over the top side of the toast, covering it entirely.
  • Slice the onion. Reserve a few rounds for garnishing, then roughly chop the rest.
  • Coarsely grate the cheese and mix in the chopped onion and 1 teaspoon of the red chilli. Mash briefly with a fork until it begins to stick together.
  • Spoon the cheese over the bread and press down lightly.
  • Place on a baking sheet and cook for around 8-10 minutes until the cheese is nicely melted.
  • When the chilli cheese toast is almost cooked fry the egg in a little oil to your liking.
  • Transfer the chilli cheese toast to a serving plate, top with the egg and garnish with salt, pepper and the reserved spring onion & red chilli.

Serving Suggestions

  • The recipe can easily be doubled to satisfy a heartier appetite. Try serving some roasted or fried tomatoes on the side.

Notes

Expert Tips
• Use either red or green chilli.
• Serve a pot of Blaze chutney on the side too for an extra kick of chilli heat.
• Vary the bread – white, wholemeal or sourdough all work wonderfully.
• Omit the egg for a late-night snack perfect for eating with fingers only.
• Avoid toasting the bread too much otherwise the edges may catch as it bakes in the oven.
Bombay Spiced Tomato Chutney can be used in place of Blaze.
