Garlic Bread with Cheese

This is a fun recipe that creates an indulgent and fully loaded garlic bread perfect for sharing. Our Amber Honey and Garlic pickle provides a sensational lift to a well-loved classic side order. If you are short of time, it is fine to use store bought pizza bases.

Ingredients

Ingredients (makes 2 x 6 slice breads)

  • 250 g Strong bread flour
  • ½ tsp Salt
  • ¾ tsp Fast action yeast
  • 170 ml Water tepid
  • 200 g Mozzarella block
  • 50 g Butter room temperature
  • 4 Garlic cloves
  • 10 g Parsley
  • 1 tbsp Amber Honey and Garlic
  • Polenta or semolina

Instructions

  • Put the flour into a medium-sized bowl then add the salt to one side and the yeast to the other.
  • Pour ¾ of the water into the bowl and use a wooden spoon to mix the ingredients together, adding more water as necessary until a soft dough forms that incorporates all the flour. You may not need all the liquid.
  • Knead, either by hand or in a machine, for 5-10 minutes until the dough is smooth and elastic.
  • Put a teaspoon of olive oil into a clean bowl, spread it around the base and sides with your fingers, then place the dough in the bowl, cover and leave it to rise until doubled in size (60-90 minutes).
  • When the dough is almost ready preheat your oven to as hot as it will go and put 2 large baking sheets into the over to heat up too.
  • Also prepare the garlic butter: crush the garlic cloves and chop the parsley. Mash both ingredients into the butter.
  • Grate the cheese.
  • When the dough has risen knock back it back, knead briefly, then divide it into two.
  • On a floured surface, roll out/ hand stretch the first piece of dough to approximately 9 inches
  • Scatter a little semolina or polenta onto another baking sheet and lay the rolled dough on top. Spread half of the garlic butter over the dough, almost to the edge and scatter half of the mozzarella over it too.
  • Open the oven, scatter a teaspoon of the semolina/ polenta over the pre-heated baking sheet and slide the prepared garlic bread onto it. Allow it to cook for 8-10 minutes, rotating it midway through the baking time to ensure it cooks evenly.
  • As soon as the first bread goes into the oven, roll out the remaining dough, add the toppings and get it into the oven as fast as you can.
  • When the garlic bread is baked pull it out of the oven, slice and dot the Amber Honey & Garlic pickle over the top.

Notes

Expert Tips
Our garlic bread with cheese makes an indulgent side to plenty of dishes including lasagne or it’s a lovely addition to a party buffet. 
• Get the breads into the oven as quickly as possible once they have been rolled and topped. If you leave them on the baking sheet there is a high chance that the dough will stick to the sheet and be hard to transfer to the oven.
• Take a short cut and use store bought pizza bases if you are short on time.
• Vary the cheese. Gorgonzola would also pair wonderfully with our Amber pickle too.
• Add more garlic – the less faint hearted could add a couple of extra cloves of garlic to the butter.
