Ploughman’s Open Sandwich

A ploughman’s open sandwich is the ultimate in quick, tasty and satisfying lunch fayre. It can be ready in minutes and comes loaded with so many enticing savoury flavours, plus a burst of tangy, fruity sweetness from our Ploughman’s Vegetable Chutney. Just add a glass of beer.

Ingredients

Ingredients (per person)

  • 1 Large slice fresh crusty bread
  • Knob of butter
  • 1-2 Slices Roast ham
  • 25 g Cheddar cheese or Red Leicester
  • 3 Lettuce leaves from a round lettuce
  • 3 Slices tomato
  • 6 Slices cucumber
  • 2-3 Small Pickled onions
  • 1 tbsp Coleslaw
  • 1 tbsp Ploughman’s Vegetable Chutney
  • 1 Eating apple

Instructions

  • Butter the bread and lay on a plate or serving platter
  • Lay the ham on top
  • Arrange the tomato and cucumber slices over the ham in several places
  • Slice the cheese and place on top
  • Halve the pickled onions and scatter over the top of the sandwich
  • Spoon the coleslaw into the middle
  • Place 2 piles of Ploughman’s Vegetable chutney over the cheese
  • Serve with the apple alongside or cut slices and add directly onto the sandwich

  • This open sandwich is substantial as it is but add in a sausage roll or a scotch egg if appetites are large.

Notes

Expert Tips
• Do ensure the bread is very fresh
• Select the cheese according to your own preferences. Mild or mature versions both work well.
• Alternatively, opt for a classic English blue cheese such as Stilton
• Don’t cut the apple until it’s time to serve as the flesh will brown quickly once exposed to the air.
