Ruby Finger Sandwiches
Our trio of finger sandwiches featuring Ruby Beetroot & Horseradish Relish are a delight to include in an Afternoon Tea sandwich selection. They are all extremely easy and the recipe can be scaled up to make more as required. Each recipe makes 4 finger sandwiches.

Ingredients
Salt Beef Sandwiches
- 2 Slices of bread medium cut
- Butter – for spreading
- 1 tablespoon Ruby Beetroot & Horseradish relish
- 3 Large slices Salt beef or pastrami or 6 small slices
- A Handful of rocket
Cream Cheese Sandwiches
- 2 Slices of bread medium cut
- 3 tablespoon Cream cheese
- 1 tablespoon Ruby Beetroot & Horseradish relish
- Salad cress
Cheddar & Apple Sandwiches
- 2 Slices of bread medium cut
- Butter – for spreading
- 50 g Mature cheddar cheese
- ¼ Apple
- 1 tablespoon heaped Ruby Beetroot & Horseradish relish
- Salad cress – 1/3 of a standard pot
Instructions
Salt Beef Sandwiches
- Trim the crusts from the bread and spread one side of each slice with butter.
- Cut the salt beef slices in half and lay 3 pieces onto the bread.
- Spread the Ruby relish over the top of the beef.
- Add the rocket then top with the remaining salt beef.
- Place the second slice of bread onto the top and cut the sandwich into four thin slices.
Cream Cheese Sandwiches
- Trim the crusts from the bread and spread one side of each slice with butter.
- Cut the salt beef slices in half and lay 3 pieces onto the bread.
- Spread the Ruby relish over the top the cream cheese on one of the slices.
- Cut the salad cress and sprinkle it over the relish.
- Place the second slice of bread onto the top and cut the sandwich into four thin slices.
Cheddar & Apple Sandwiches
- Grate the cheese and apple coarsely and mix them together.
- Trim the crusts from the bread and spread one side of each slice with butter then spread the Ruby relish over the butter.
- Spoon the cheese and apple filling over the top of one slice of bread.
- Place the second slice of bread onto the top and cut the sandwich into four thin slices.
Notes
Expert Tips
• Make the sandwiches as close to the time of serving as possible to avoid them drying out.
• Cover them loosely with food wrap until ready to serve.
• Choose granary or wholemeal bread for the cream cheese sandwich to add contrast to the appearance.
• A lively tasting apple, such as a Pink Lady, is ideal for the cheddar & apple sandwich.
• You can make any of these sandwiches as regular-sized sandwiches by simply not removing the crust from the bread and cutting them in half rather than slicing the into sandwich fingers.
